Mrs. Hardesty’s Pickle
from the cookbook of

Ingredients
½ peck sliced cucumbers in brine
1 cauliflower
6 pounds cabbage
2 pounds onions
Salt to taste (Calls for 1 pound, but too much!)
¼ pound dry mustard
7 ounces mustard seed
3 ounces celery seed
1½ ounces turmeric
5 pounds brown sugar
1 gallon vinegar

Garlic Dill
Cucumber Strips
To each quart jar that has been
sterilized, add:
Ingredients
Strip of slim cucumbers to fill jars
1/8 teaspoon alum
1 teaspoon dill seed
1 teaspoon dill weed
1 to 2 sliced garlic cloves
1 to 2 small hot peppers
Make a syrup
1 quart white vinegar
½ cup salt
3 quarts water
½ cup sugar
Combine ingredients. Heat to
boil. Stir. Pour in jars. Cover
immediately with sterilized lids.
