Raspberry Jam C O O K I E S
INGREDIENTS
2 cups flour
1 stick salted butter, room temperature
½ cup granulated sugar
2 Tbsp honey
1 egg
1 tsp baking powder
1 tsp vanilla extract
1 cup raspberry jam
½ cup powdered sugar
Two heart-shaped cookie cutters, one large (3”)
and one small (½”)
PREPARATION
Preheat oven to 375F.
Beat sugar, butter and honey until combined.
Add egg and vanilla. Continue beating until totally
combined. In a small bowl mix together flour and
baking powder. Add dry ingredients, ½ cup at a
time, beating until incorporated. Scrape down the
sides of the bowl and beat for a few moments
longer.
Roll out the dough into a large rectangle,
¼” thick. Use the large cookie cutter to cut into
hearts. Use the smaller cookie cutter to cut hearts
out of the center of half of the hearts.
Bake for 7-9 minutes, until they begin to brown
around the edges. Transfer to a cooling rack.
When they have cooled, spread an even layer
of jam on the whole cookies and dust the cutouts
with powdered sugar.
Gently place the cutout cookies on top of the
jam-covered cookies to create a sandwich.
