Step past the steel drum band at the entrance into the tropical oasis that is Caribbay Soul (35 N. Front Street 910-465-7617). Co-owned by Chris Hobbs and Chris Schmidt this hip and happening downtown eatery is known for its Caribbean twist on traditional Southern soul food. The Baked Whole Snapper ($21.95) is stuffed with julienned zucchini and squash diced red and green peppers onions and mouthwatering spices and is served with coconut milk-soaked sweet red beans and rice. “Everything here is made from scratch ” says Hobbs and delivered we might add with the sunny spirit of the islands.
