And the joy of banking where you’re priority number one. www.wrightsvillebeachmagazine.com WBM Parmesan & Toasted Pecan Zucchini Salad Recipe courtesy of The Veggie Wagon INGREDIENTS: 1∕3 cup olive oil 1 Tbsp chopped fresh oregano 2 Tbsp fresh lemon juice ½ tsp white pepper 1 tsp kosher salt 2 pounds zucchini ¼ tsp crushed red pepper ½ cup chopped fresh basil ¼ cup toasted pecans Parmesan cheese to taste, freshly grated or packaged DRESSING PREPARATION: Whisk olive oil, lemon juice, salt, white pepper and crushed red pepper together and set aside. SALAD PREPARATION: Shave each zucchini into ribbon slices from top to bottom. Once you have shaved all 2 pounds of zucchini, place the ribbons in a large bowl. Add basil and oregano then toss to combine. Heat a nonstick skillet on the stovetop until extremely hot, then turn down to medium heat. Add the pecans to toast. Toast shelled, chopped pecans for 5-10 minutes, stirring occa-sionally with a wooden spoon or spatula. Add pecans to the zucchini. Pour the dressing over top and toss.
